Tony Feguson Recipe of the Week: Rosemary Beef Stroganoff

Rosemary Beef Stroganoff (Serves 2)
Ingredients:
- Lean beef fillets, cut into strips: 2 x 120g (females) OR 2 x 220g (males)
- 4 Medium yellow squash, sliced chunkily
- 6 Medium mushrooms, sliced
- 1 Medium red capsicum, chopped into 2cm squares
- 1 Small onion, chunkily chopped
- 1 Cup of prepared gravy (ensure it is TF friendly e.g. Greens gravy granules)
- ½ to 1 Cup of water (as required)
- 2 – 4 Cloves of garlic, crushed
- 1 Tablespoon of Rosemary, finely chopped
- Garlic and herb seasoning as desired
- Salt and pepper, as desired
- 1 Tablespoon of olive oil
Method
Place a large fry pan on medium heat and add olive oil. Add beef, garlic and onion and cook for 3-5 minutes, stirring occasionally to prevent sticking.
Add all the remaining vegetables, half the rosemary, seasoning and combine, then cook for 5 minutes, stirring occasionally to prevent sticking. Add the gravy and remaining rosemary, then combine well, add an additional ½ to 1 cup of water to make a sauce.
Taste and add salt and pepper if desired. Reduce heat to low and simmer for 10 minutes or until sauce has reduced to desired consistency.
Serve immediately with a salad or vegetable side dish.
Note:
- Lamb, pork or chicken may be used instead
- For a more traditional style stroganoff, add 2 tablespoons of low fat smooth ricotta to the additional water and stir well to combine before adding this to the stroganoff.

Asthma Winter Warning – The Return of the Silent Killer

The death rate amongst the two million Australians who live with asthma rose for the first time in a decade from 314 in 2005 to 402 in 2006. Most of the rise was accounted for by older people.
It’s a worrying statistic at any time, but more so with winter just around the corner. Winter is when the vast majority of asthma deaths occur, mostly in older people.
‘Although the death rate is no where near the 1000 mark we saw during the late 80’s and early 90’s, we need to take steps to ensure the numbers don’t creep up any further and that we reinforce the message reflected by these figures that asthma is a serious disease and that you can die from it,’ said Greg Smith, CEO of Asthma Foundation NSW.
Diabetes Costing The Nation

The impact of diabetes on the Australian community was highlighted in a new report released today by the Australian Institute of Health and Welfare (AIHW).
Diabetes Australia President Dr Gary Deed said “As a nation we need to turn the rising tide of diabetes around. This will require a concerted effort from all key stakeholders, government at all levels, non-government organisations, community based agencies and their leaders to work in partnership to develop healthier lifestyles.
Dr Deed noted the information, reported by Dr Penny Allbon who heads up the AIHW, that the prevalence of diabetes has doubled in the past decade and that this was attributable to lifestyle risk factors such as tobacco smoking, high blood pressure, overweight and obesity and lack of physical activity.
