Asthma Warning – spring has sprung
Spring is a traditional time of re-birth and re-growth and warmer temperatures. That’s good news for most people, but not for the 800,000 people who live with asthma in New South Wales, many of whom live in dread of that “something” that triggers their allergies or asthma.
As nature bursts into life again the atmosphere becomes full of pollens – little seeding spores released by grasses, flowers, trees and weeds, which are dispersed by the wind. Of the 1:9 adults and 1:6 children who have asthma around 90% of children and 70% of adults are atopic which means they have a genetic tendency to develop allergic diseases.
Tony Ferguson’s Recipe of the Week – Spiced Apricot Chicken

This spicy apricot chicken is a perfect dish to serve on those warm spring evenings. A delicious Moroccan combination of sweetness from the apricots and spiciness from the spices.
Ingredients (Serves 2)
- Chicken breast fillets – 2 x 120g (Females) OR 2 x 220g (Males), chopped into 2cm cubes
- 1 Medium onion, peeled, finely chopped
- 2 Garlic cloves, crushed
- 1 Tablespoon Moroccan seasoning blend
- 10 Dried Apricots, finely chopped
- 6 – 8 Large basil leaves, torn
- 1 Cup of boiling water
- 1 Tablespoon of soy sauce
- 1 Tablespoon of Simply fibre
- 1 Cup of Chicken stock (salt reduced)
- 2 Teaspoons of olive oil
- Salt and pepper
Method
- In a medium bowl, add 1 cup of boiling water and the apricots and set aside for 10 minutes. Then drain water into a cup
- Place the chicken in a medium bowl add a pinch of salt, pepper and Moroccan spice and combine well
- Heat 1 teaspoon of oil in large fry pan over medium heat. Add the chicken and cook until golden. Remove the chicken from the pan and set aside
- In the same pan, add 1 teaspoon of olive oil and heat, then add onion and garlic. Cook, stirring occasionally, for 3 to 4 minutes or until tender
- Add the chicken back to the pan, then add the apricots, basil, the cup of water that the apricots were soaked in and chicken stock. Combine well and then and cook for 20 minutes or until the sauce has thickened
- Serve immediately on a bed of Notatoes
