Keep Warm with Healthy Chilli Pork Schnitzel

Serves 2.
Ingredients:
- 2 x 100g Pork fillets
- 4 Cloves of garlic, crushed
- 2 Teaspoons of chilli paste
- Salt and pepper to taste
- Garlic and herb seasoning
- 1 Egg, beaten
- ½ Cup Tony Ferguson Fibre
- 1 Tablespoon of olive oil
Method:
- Beat fillets with a meat mallet until flat, then cut in half.
- Rub both sides of fillets evenly with crushed garlic and chilli paste and season with salt and cracked pepper as desired.
- Combine fibre, seasoning & salt to taste and spread evenly on a large plate.
- To crumb schnitzel: Dip fillets into the beaten egg and crumb on both sides with the fibre mix.
- Heat olive oil in a medium fry pan on medium heat and toast schnitzel until golden on both sides.
- Serve immediately with side salad as pictured.
