Serves 2.

Ingredients:

  • 2 x 100g Pork fillets
  • 4 Cloves of garlic, crushed
  • 2 Teaspoons of chilli paste
  • Salt and pepper to taste
  • Garlic and herb seasoning
  • 1 Egg, beaten
  • ½ Cup Tony Ferguson Fibre
  • 1 Tablespoon of olive oil

Method:

  1. Beat fillets with a meat mallet until flat, then cut in half.
  2. Rub both sides of fillets evenly with crushed garlic and chilli paste and season with salt and cracked pepper as desired.
  3. Combine fibre, seasoning & salt to taste and spread evenly on a large plate.
  4. To crumb schnitzel: Dip fillets into the beaten egg and crumb on both sides with the fibre mix.
  5. Heat olive oil in a medium fry pan on medium heat and toast schnitzel until golden on both sides.
  6. Serve immediately with side salad as pictured.
