Recipe: Pork & Baby Corn Stir-fry

Stumped what to cook for your friends that’s healthy but not dull and tasteless? GHA’s Recipe of the week is the delicious Pork & Baby Corn Stir-fry.
Combining easy ingredients like, yummy mushrooms, pork fillets, green beans & baby corn! Just grab your pen and paper and jot the rest down for tonight.

Ingredients
Pork fillets (2 x 120g – females OR 2 x 220g – males), cut into strips
4 Cloves garlic, crushed
8 Medium mushrooms, finely sliced
1 Cup green beans, chopped into 2cm match sticks
1 Cup baby corn, halved
2 Stalk of shallots, finely chopped
1 Tablespoon fish sauce
1 Tablespoon salt reduced soy sauce
2 Teaspoons of chilli paste
1 Tablespoon olive oil

Method

Heat the olive oil in a medium fry pan or wok on medium heat, then add pork and toast until just browned.
Add the garlic, mushrooms, beans, baby corn and shallots and stir-fry for 3-4 minutes.
Add the fish sauce, soy sauce and chilli, combine well and stir-fry for a further 3 minutes.
Serve immediately alone or on a bed of Cauliflower rice.

(Serves 2 females or 1 male)
