Recipe: Salmon & Ricotta Patties

A quick and easy healthy meal. This weeks Tony Ferguson recipe is for Salmon and Ricotta patties that is full of flavour and is big enough to serve 2 females or 1 male.

Ingredients

  • 180g of salmon canned in spring water with no bones contained
  • 80g of low fat ricotta cheese
  • ¼ Medium red onion, finely chopped
  • 6 Large basil leaves, finely chopped
  • 1 – 2 Cloves garlic, crushed
  • Salt and cracked pepper for seasoning (as desired)
  • 1 Small lemon cut into quarters
  • 1 Tablespoon of olive oil

Method

  1. In a medium bowl, combine the salmon, ricotta, onion, basil, garlic and seasoning.
  2. Divide the mix up into about 4 and form patties.
  3. Heat the oil in a medium fry pan on medium heat. Add the patties and toast until golden on each side.
  4. Serve immediately on a bed of Notatoes with a side salad and the lemon quarters to squeeze on the patties.
