Strawberry Panacotta
Tony Ferguson’s Recipe of the Week.
With the warmer weather here, Tony Ferguson has selected a lite Strawberry Panacotta for the recipe of the week.
It’s full of chopped strawberries with smooth ricotta cheese and perfect for a warm spring evening.
Ingredients
- Sachet of Tony Ferguson Strawberry Diet Jelly
- Tablespoons of low fat smooth ricotta cheese
- ½ – 1 Serve of fruit of choice e.g. strawberries chopped into small pieces
- 250ml water (125ml boiling, 125ml cold)
Method
- Obtain a glass cup or similar sized glass serving bowl, add the diet jelly crystals and 125ml boiling water and dissolve the jelly crystals.
- Add the cold water and combine well then add the ricotta and combine well to make a smooth consistency.
- Either add the fruit or half the fruit to the jelly mix or save for serving.
- Place the jelly in the fridge for several hours or until set.
- Serve as a dessert.
