Tony Ferguson Recipe of the Week – Steak Sandwich

Ingredients

  • Olive oil spray
  • 2 medium eggplants cut into thick slices lengthways
  • 1 large red capsicum, seeds removed and quartered
  • 1 cup mushrooms, thinly sliced
  • 4 x 120g lean beef steak (females)
  • 4 x 220g lean beef steak (males)
  • 1 large onion, thinly sliced
  • 100g baby rocket leaves
  • 1 teaspoon olive oil
  • 1 tablespoon balsamic vinegar
  • Hot English mustard

Tony Ferguson recipe of the week – Chilli, Lime and Herbed Prawns

Ingredients

1 x cup coriander leaves (or herbs that you desire eg. Basil, oregano)
1/4 x cup olive oil
2 x cloves garlic finely chopped
1 x stem of lemongrass, bruised and thinly sliced
2 x small red chillies, seeded and thinly sliced
2 x limes juiced
4 x 120g king prawns, peeled (tails left in tact), deveined (4 x 220g king prawns for males)
2 x lebanese cucumbers, seeded
2 x avocados, peeled, diced (small avocados)
1 x cup rocket lettuce

Tony Ferguson recipe of the week – Curried Sausages

Ingredients

Lean beef sausages, small to medium size (2 sausages per female or 3 sausages per male)
1 Large brown onion
1 Cup of mushrooms, sliced
½ Bag mixed frozen vegetables (carrots, green beans, broccoli and cauliflower)
1 Tablespoon parsley flakes
1 Teaspoon oregano leaves
2 Cups salt reduced vegetable stock
1 Tablespoon olive oil
