Recipe: Spicy Chicken & Mango Salad
Tony Ferguson Recipe of the week:
Is a beautiful spicy chicken & mango salad with ginger, chili, soy sauce. Served on a bed of rocket, Spanish onion, capsicum and avocado.
Big enough to serve either 2 females or 1 male.
Chicken
* 220g Chicken breast, chopped into strips
* 1 Teaspoon of ginger paste
* ½ Tablespoon chilli paste (optional)
* 1 Tablespoon soy sauce
* 1 Teaspoon olive oil
Salad
* 1 Medium Mango, ¾ sliced, ¼ blended to a juice (for the dressing)
* 2 Cups of rocket
* ½ Medium Spanish, finely chopped
* ¼ Large red capsicum, finely sliced
* ½ Medium avocado, sliced
* 6-8 Basil leaves, torn
Salad Dressing
* Lemon, juiced
* 1 Teaspoon of soy sauce
* ½ Tablespoon of olive oil
* 1/4 Mango juiced (mentioned above)
Method
1. Marinade the chicken by adding the chicken, ginger, 1 tablespoon of soy sauce and chilli paste in a bowl together and combine well
2. Place a medium fry pan on medium heat and add one teaspoon of olive oil. Add the chicken mix and cook until golden
3. While the chicken is cooking, make the salad dressing by combining all the salad dressing ingredients in a small bowl
4. Once the chicken has cooked, obtain serving bowl (s), add the rocket, basil, Spanish onion, capsicum, avocado and mango slices, then top with the chicken
5. Drizzle the dressing over the chicken and salad and toss if desired
6. Serve immediately as a fresh meal
Suggestions
Other meat or meat alternatives (protein serves) may be used such as prawns, beef or tofu.
